Method
Step 1: Prepare the Mango Puree
Peel and chop the ripe mango.
Blend the mango pieces in a blender until smooth. If needed, strain to remove any fiber.
Step 2: Muddle the Ingredients
In a glass, add the mint leaves and jalapeño slices.
Using a muddler, gently press the mint and jalapeño to release their flavors, but don’t pulverize them.
Step 3: Mix the Cocktail
In a shaker, combine the mango puree, lime juice, simple syrup, and white rum.
Fill the shaker with ice, then shake vigorously for about 15 seconds until well mixed and chilled.
Step 4: Assemble the Mojito
Fill two glasses with ice.
Strain the mixture from the shaker into the glasses over the ice.
Top off each glass with club soda to add some fizz.
Step 5: Garnish and Serve
Garnish each cocktail with a sprig of mint.
Optionally, add a slice of lime or additional jalapeño for a pop of color.
Stir gently before serving to mix the flavors, and enjoy!
