  • 1 oz simple syrup adjust for sweetness
  • 1/2 cup soda water or club soda
  • Ice cubes

  • In a blender, add the cubed honeydew melon and half of the mint leaves. Blend until smooth. You may need to add a little water to help it blend more easily.
  • Strain the Mixture:
  • Using a fine mesh strainer, strain the blended mixture into a bowl or pitcher to remove any pulp. This step ensures a smoother drink.
  • Mix the Ingredients:
  • In a cocktail shaker, combine the honeydew-mint juice, lime juice, vodka (or gin), and simple syrup. Fill the shaker with ice and shake vigorously for about 15 seconds.
  • Serve:
  • Fill two glasses with ice cubes and strain the cocktail mixture over the ice. Top each glass with soda water to add a bubbly finish.
  • Garnish:
  • Garnish with additional mint leaves and a small slice of honeydew on the rim of each glass.
  • Variations
  • Non-Alcoholic Version: Replace the vodka with extra soda water or a splash of ginger ale for a refreshing mocktail.
