  • 3/4 oz freshly squeezed lemon juice
  • 1/2 oz honey syrup more on this below
  • Ice

Instructions

  • Step-by-Step Method
  • Prepare the Honey Syrup:
  • Honey syrup is easy to make and essential for the Honey Bee. It’s simply a mixture of honey and water in a 1:1 ratio. Combine 1 part honey and 1 part hot water (not boiling, just hot enough to mix). Stir until the honey is fully dissolved. Let it cool. From my own personal experience, honey syrup blends more smoothly into cocktails than honey on its own. You can also make extra and store it in the fridge for future cocktails.
  • Combine Ingredients:
  • In a cocktail shaker, add 2 oz white rum, 3/4 oz lemon juice, and 1/2 oz honey syrup. Fill the shaker with ice.
  • Shake It Up:
  • Shake the mixture vigorously for about 15 seconds. This not only chills the drink but also incorporates the flavors. Based on my overall experience, shaking really helps to create a smooth and well-blended cocktail.
  • Strain and Serve:
  • Using a strainer, pour the cocktail into a chilled coupe glass. You can garnish with a lemon wheel or even a sprig of fresh herbs like thyme for an aromatic twist.
  • Variations
  • Honey Bee with Bourbon: Substitute the rum for bourbon for a richer, more robust flavor. This variation works especially well if you enjoy cocktails with a deeper flavor profile.
  • Gin Bee: Swap out the rum for gin if you're a gin lover. It gives the drink a floral twist and pairs beautifully with the honey.
  • Non-Alcoholic Version: For a mocktail, substitute the rum with a high-quality non-alcoholic spirit or a splash of soda water for a refreshing alternative.
