- Ingredients:
- 2 ripe peaches peeled and sliced (or 1 cup of peach purée if you're in a hurry)
- 1 tablespoon lemon juice
- 1 tablespoon sugar optional, depending on how sweet you like it
- 1 bottle of Prosecco or any sparkling wine of your choice
- Ice cubes for blending if using fresh peaches
Step-by-Step Method:
Prepare the Peaches
If you're using fresh peaches, peel and slice them first. Place the peach slices into a blender along with a tablespoon of lemon juice. The lemon juice keeps the peaches vibrant and enhances their natural flavor. If you're going for a shortcut, you can use pre-made peach purée—just make sure it's unsweetened.
Blend into a Smooth Purée
Blend the peach slices (or purée) with ice cubes until it reaches a smooth consistency. If you want a slightly sweeter Bellini, add in a tablespoon of sugar at this point. From my own personal experience, it’s good to taste it here and adjust sweetness as needed.
Strain the Purée (Optional)
If you prefer a smoother texture, use a strainer to remove any peach bits. This is totally optional and depends on how you like your Bellini texture.
Add the Purée to Champagne Flutes
Pour about 2 tablespoons of peach purée into each champagne flute. You can adjust this amount based on how strong of a peach flavor you want in the drink.
Top with Prosecco
Slowly pour the chilled Prosecco over the purée to fill the glass. Tilt the glass slightly while pouring to preserve the bubbles. Stir gently to combine the purée and the Prosecco.
Serve Immediately
Serve your Fizzy Peach Bellini immediately for the best flavor and fizz. Garnish with a slice of peach or a sprig of mint if you want to get fancy!

Alcohol-Free Option:
Swap the Prosecco with sparkling water or club soda for a delightful mocktail version. The peach purée still gives it that refreshing sweetness without the alcohol.
Vegan:
The Bellini is naturally vegan as long as you ensure your Prosecco is vegan-friendly. Look for wines labeled as such.
Low-Sugar Option:
Skip the added sugar entirely. The natural sweetness of ripe peaches usually does the trick.
Dietary Needs:
If you want to make it keto-friendly, you can use a sugar substitute like stevia. Just blend the peaches with a touch of stevia instead of regular sugar.
