- 2 oz white rum

- Club soda to top off
- Ice cubes
- Mint sprig for garnish

- Method
- Step 1: Prepare the Mango Puree
- Peel and chop the ripe mango.
- Blend the mango pieces in a blender until smooth. If needed, strain to remove any fiber.
- Step 2: Muddle the Ingredients
- In a glass, add the mint leaves and jalapeño slices.
- Using a muddler, gently press the mint and jalapeño to release their flavors, but don’t pulverize them.
- Step 3: Mix the Cocktail
- In a shaker, combine the mango puree, lime juice, simple syrup, and white rum.
- Fill the shaker with ice, then shake vigorously for about 15 seconds until well mixed and chilled.
- Step 4: Assemble the Mojito
- Fill two glasses with ice.
- Strain the mixture from the shaker into the glasses over the ice.
- Top off each glass with club soda to add some fizz.
- Step 5: Garnish and Serve
- Garnish each cocktail with a sprig of mint.
- Optionally, add a slice of lime or additional jalapeño for a pop of color.
